Ingredients:
1 tablespoon vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons red curry paste
4 cups vegetable broth
1 can (14 oz) coconut milk
1 cup water
2 cups dumplings (store-bought or homemade)
1 cup fresh spinach
1 red bell pepper, sliced
1-2 jalapeños, sliced (adjust to taste)
2 tablespoons soy sauce
1 tablespoon lime juice
Fresh cilantro for garnish
Sliced green onions for garnish
Directions:
In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
Add the red curry paste to the pot, stirring well to combine with the onion mixture. Cook for another 2 minutes to enhance the flavors.
Pour in the vegetable broth and coconut milk, followed by the water. Bring the mixture to a gentle simmer.
Once simmering, add the dumplings to the pot and cook according to package instructions or until they are heated through.
Stir in the fresh spinach, sliced red bell pepper, and jalapeños. Allow the soup to simmer for an additional 5 minutes until the vegetables are tender.
Season the soup with soy sauce and lime juice, adjusting to taste.
Serve hot, garnished with fresh cilantro and sliced green onions.
