Ingredients:
• 1 lb white fish fillets (e.g., cod or tilapia), cut into chunks
• 1 can (13.5 oz) coconut milk
• 2 cups fish or chicken broth
• 1 tbsp olive oil
• 1 small onion, chopped
• 3 cloves garlic, minced
• 1 tbsp fresh ginger, grated
• 1 red bell pepper, sliced
• 1 tbsp fish sauce (optional)
• Juice of 1 lime
• Zest of 1 lime
• Salt and pepper to taste
• Fresh cilantro, chopped (for garnish)

Instructions:
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
2. Stir in the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
3. Add the sliced red bell pepper and cook for another 2-3 minutes until slightly softened.
4. Pour in the coconut milk and fish or chicken broth, stirring to combine.
5. Bring the soup to a gentle simmer. Add fish sauce (if using), lime juice, lime zest, salt, and pepper to taste.
6. Carefully add the fish chunks to the simmering soup. Let cook for 5-7 minutes, or until the fish is cooked through and flakes easily.
7. Taste and adjust seasonings if needed. Add red chili flakes or fresh chili for extra heat, if desired.
