Blueberry Yogurt Clusters (Healthy Snack)
These are refreshing, high in protein, and take only 5 minutes to prep!
Ingredients
Fresh Blueberries: 1 cup (washed and dried).
Greek Yogurt: 1/2 cup (plain or vanilla).
Honey or Maple Syrup: 1 tablespoon (optional for sweetness).
Dark Chocolate: 1/2 cup (melted, for drizzling or dipping).
Coconut Oil: 1 teaspoon (to make the chocolate smooth).
Instructions
Mix: In a small bowl, combine the blueberries and Greek yogurt (and sweetener if using) until every berry is well-coated.
Scoop: Line a tray with parchment paper. Use a spoon to drop small “clusters” of the mixture onto the tray.
Freeze: Place the tray in the freezer for about 30-60 minutes until the yogurt is firm.
Coat: Melt the chocolate with coconut oil. Dip the frozen clusters into the chocolate or drizzle it over the top.
Set: Place them back in the freezer for 5 minutes until the chocolate hardens, then enjoy!
5-Minute Chocolate Espresso Mousse (The Blender Method)
This is the “Espresso da Frullatore” style you were trying to share!
Ingredients:
1 ripe Avocado (for creaminess) or 1 cup Greek Yogurt.
2 tbsp Unsweetened Cocoa Powder.
1 shot of cold Espresso (or 1 tsp instant coffee dissolved in a little water).
2-3 tbsp Honey or Maple Syrup.
Method: 1. Throw everything into a blender (Frullatore).
2. Blend until completely smooth and velvety.
3. Pour into small cups and top with a few chocolate shavings or a coffee bean.
4. Serve immediately or chill for 10 minutes.
2. Frozen Yogurt Bark (The “Flat” Version of your Clusters)
If the clusters are too messy to make, try the “Bark” version.
Ingredients:
2 cups Greek Yogurt.
1/4 cup Honey.
Mixed Berries (Blueberries, Raspberries, Strawberries).
A handful of Granola or Chopped Nuts.
Method:
Line a baking sheet with parchment paper.
Spread the yogurt mixture flat (about 1cm thick).
Press the berries and granola into the top.
Freeze for 2-3 hours until rock hard.
Break into jagged “shards” or pieces and serve cold.
3. Healthy “Snickers” Dates
The ultimate 3-ingredient viral snack.
Ingredients:
Large Medjool Dates (pitted).
Peanut Butter (or Almond Butter).
Melted Dark Chocolate.
Method:
Stuff each date with a teaspoon of peanut butter.
Close the date and dip it into melted dark chocolate.
Sprinkle with a tiny bit of sea salt.
Freeze for 15 minutes to set the chocolate.
